My mom brought Monty back to my place today and I made us a little lunch of my leftovers from yesterday. I had Amy's brand soup-curried lentil...sooo good. I add a can of mixed beans to it so it is a bit more filling and it was delish. My mom had left over alfredo veggies with baked tofu and we both had a little blueberry muffin. Yum!
After she left I headed to work and spent the majority of my time reading and catching up on blogs. I was excited to get home because Mr. Monty was waiting for me and we didn't get to spend much time together this morning! I took him on a quick walk, it was way too cold to stay outside for long and then we had dinner.
I bought brussel sprouts Sunday and almost forgot I had them, so I had spicy roasted brussel sprouts and half a baked potato for dinner...it was soooooooooo good. I want to eat my left overs now!!! After dinner I did a little painting and it was soo fun!! I plan on doing more tomorrow and finding some cute frames for them! Now it is Biggest Loser time and then doing my new Jillian Michael's 30 Day Shred workout dvd!!
I bought it over the weekend and tried it out for the first time last night and I happy to say it was intense and I loved it!!! Even though I have lost 55 lbs and am the smallest I have ever been, I still have bummer days about my body and haven't really accepted my new figure. This year I really want to start feeling better about myself and want to get everything toned up for summer and maybe wear a swimsuit for the first time in probably 5 years!!!
I have noticed that a lot of you lovely blog ladies have been posting about diet and work outs and it is super inspirational to read about others experiences, their likes and dislikes and what gets and keeps them motivated!!
I plan on adding a bit more of my diet and workouts to my blog because maybe someone will gain something from reading it and that would be wonderful!!!

bussel sprout recipe:
use however many brussel sprouts you want, I wanted leftovers so I used about half the bag (fresh, not frozen)
wash them and cut them in half
place in a bowl and sprinkle with olive oil, sea salt and black pepper and diced garlic
add your favorite spicy condiment. I use either Sriracha or Cento Diced Hot Cherry Peppers but you can use Frank's Hot Sauce or red pepper flakes etc-use however much you want in relation to how spicy you want the food to be. I like spicy things, but I don't use too much because I love the flavor of brussel sprouts all on their own and don't want to mask it.
mix everything together and let sit for the time it takes to preheat the oven (400 degrees)
place on cookie sheet/baking pan and mix them around after a few minutes.
take them out once they start getting a brown roasted look to them, which is usually after 15 minutes or so.
I didn't do anything special to my baked potato. I used a bit of butter and topped it with green onion and a little bit of the diced hot cherry peppers.
Sorry, if the recipe is confusing...its just something I threw together awhile ago and a lot of the times I don't even add the spicy aspect to them. Pretty much you can do whatever you want, sometimes I add a splash of balsamic vinegar or red wine vinegar. If you have any questions about it or anything else, feel free to ask!!!!
